grilled chicken infused with garlic and ginger

I tried out the South Beach Diet once (cant live without rice or chocolate for a week that's why the south beach diet went north -- hehehe). Anyways, here is one recipe that is simple enough to do and can be a base for chicken bbq.

What you need:
Chicken Breast fillet (1 500g pack-- about half a kilo)
Olive Oil (just enough to coat chicken)
Garlic (5-6 cloves minced)
Ginger (small - minced/ diced into small pieces)
salt and pepper to taste

What to do:
Marinate chicken breast in olive oil, ginger and garlic for 4 hours or overnight for flavor to penetrate.

Add salt and pepper before grilling. Adding salt and pepper in the marinate will draw out the chicken's natural juices and will dry the chicken out.

Serve with fresh green salad with balsamic dressing.

You can use yogurt or coconut cream instead of olive oil for "Sate" effect and add achuete or yellow food color for effect. You can use a mixture of soy sauce, calamansi and chili pepper for dipping sauce.
